The Staub cast iron Coq au Vin Cocotte is specially made in France with sand casted molds. Each piece is sanded, polished and painted with three coats of super-heated enamel, so that the finish is chip and scratch-resistant, and won't cause scratches on fine surfaces. Professional chefs prefer Staub cocottes because of their unique self basting lids, with small spikes under the lid that create droplets of liquid from steam while roasting vegetables, or meats, so you get the perfect dish, every time.
